For smoking shellfish in a hot-method smokehouse, alder shavings and a smokehouse purchased in a store or made by yourself are suitable.

Before smoking shellfish, defrost, peel and remove the film. Squid is salted according to traditional recipes. For example, for 500 g of carcasses you will need:

  • 1 tsp. seasonings;
  • 1 tbsp. l. salt;
  • 0.5 tsp. granulated sugar.

Squid is not a fish and there is no need to salt it for a long time; after 30 minutes you can place it on the grill.

Marinades for 1 kg of shellfish

  • 1 tsp. bitter and allspice, paprika;
  • 1 tbsp. l. sunflower oil.

Rub the carcasses with the resulting mixture and leave in a cool place for half an hour.

  • 100 ml sunflower oil;
  • garlic.

Squeeze the juice from the lemon and mix with the remaining ingredients. Rub the squid with brine and place in a cool place for half an hour.

Brine for 600 g carcasses:

  • 1 tsp. basil, coriander, oregano, mint, garlic;
  • 200 g salt.

Dilute the ingredients with liquid to a porridge and put the shellfish in the marinade, leave for 30 minutes.

You can dip each piece into salted liquid for 15 seconds: 1 tbsp. l. salt per 1 liter of water. This procedure allows you to obtain more tender shellfish meat. Then cut the carcass into rings, place on barbecue skewers, and leave to dry for 4 hours.

Place in a smoking device for 10 hours. Pour alder or oak sawdust into the bottom. Place a tray to collect liquid. Cook at 25 degrees. When the rings are ready, they will turn golden. Air them in the air for 5 hours.
